I'm not sure what you mean. We do celebrate both the Old and New Testament.
- What specifically did you have in mind?
If you are referring to the fact that Christians don't follow the Law of Moses, it is clear, even in the New Testament, that this is only binding on the Jews, i.e., the sons and daughters of Israel.
It was never intended to be imposed on Gentiles. Since the vast majority of Christians are Gentiles, they are not bound to it. This is explained in the New Testament, in Acts 15 and the whole books of Romans and Galatians.
