Hi Ross,
Thanks for the question.
The opening prayers and responses are intended to be different than those at Sunday Mass.
Because most of the time, each weekday Mass is celebrated in honor of one of many saints in our Church as well as for various devotions the Church has. Like I have said in the past, one of the reasons I enjoy being Catholic is because we are party animals; we are always celebrating something, In Christ, of course!
This is all pre-planned and approved by the Vatican in three 2-year cycle of opening prayers, responses, and readings: Cycle A, B, and C.
The Sunday liturgy is also a pre-planned and approved in three 3-year cycle of opening prayers, responses and readings: Cycle A, B, and C.
This means that the Catholic who attends daily Mass faithfully will hear most of the entire Bible within a 2-year period and the Catholic who attends Sunday Mass faithfully will hear the entire Bible within a 3-year period.
Weekday Mass may be shorter, seeing the celebrant is conscientious that attendees have to get to their work place on time.
If you have a pastor that is faithful to the Church, I wouldn't worry, but figure a way, if possible, that you can get to weekday Mass on a regular basis.
Not all workers can do this, but if you ask around — there may be a way you hadn't previously thought of. This is what all the saints down through history have encouraged the faithful to do.
I hope this helps,
Mike
