Most parishes have no trouble providing hosts that will be gluten-free. It is kept apart from the other hosts, usually in a small pix, and distributed as needed.
At subsequent Communions, the person(s) with the allergy generally check in with the priests ahead of the scheduled Mass time to ensure that gluten-free bread is consecrated along with the other unleavened wheat bread and distributed to the individual at Communion time.
Check with your priest, but my guess is you are not alone in your parish and they have already learned to accommodate to your granddaughter's needs.
