Hi Max,
There is no law of fasting on Sundays during Lent. In the Roman Rite,
days of fasting by law are Ash Wednesday and Good Friday. Days of abstinence
from meat are Ash Wednesday and Fridays during Lent.
If you choose to do your own penance above and beyond this, you are commended
for doing so, but you are free to set your own rules. There is a tradition
of suspending your penance on Sundays, as this is the day of the Lord's
Resurrection. That is a fine tradition, however, it does tend to take the
force out of the penance, and there would be more merit in abstaining the
whole of Lent.
It is really up to you; the Church does not care.
