Dear Mike,
A civil wedding of non-baptized people is recognized as valid by the Church. She would have to file for, and obtain, an annulment by the Church in order to marry a Catholic.
If she is interested, encourage her to consider buying a cheap copy of the Catechism of the Catholic Church to learn everything we believe as Catholics.
