I do find it strange that a Catholic family appears to not be practicing the faith but wants you to have their granddaughter baptized. The nerve!
Nevertheless, it is not their choice, but yours and your daughter's father's choice. The Church teaches that the parents are the primary educators of their children.

Yes! If your in-laws feel that is it so important that their granddaughter be baptized, why wouldn't they also feel the same way about you being baptized? You are her mother.
As for Baptism, the Church cannot baptize your daughter unless their is a good hope that your daughter will be raised as a Catholic.
If you were married in the Church, you should have been informed that the non-Catholic spouse does not have to become Catholic but does have to agree to the children from their marriage being raised Catholic, — a long with the proper understanding of what marriage is.

In my opinion, you are missing out on a lot Michele. Pray privately for guidance from the Lord. Becoming part of Jesus' Body here on earth and in Heaven, as a Catholic, will make a world of difference in your life.
If you wish to go deeper, consider buying a cheap copy of the Catechism of the Catholic Church to learn everything we believe as Catholics.
