I know we can't do that to one another, as humans, but I was wondering what the Catholic teaching is on animals, and pets in particular.

While it is extremely sad and painful to be in this situation, the Church has no law prohibiting the euthanization of pets.

We don't euthanize humans because God alone has jurisdiction over us, but He has given us jurisdiction over animals, and therefore we have the authority to do so.
