Yes, there is no ethical prohibition on the dissection of animals. We are assuming that the animal is not suffering cruelty. There are some treatments of animals that are unethical, and experimentation on living animals can raise moral questions, but the Church has been hesitant to make any explicit declarations on these matters.
I think using good humane judgement is your best guide.
