As Catholics, we know it because of the Revelation of Jesus Christ, the Incarnate God-Man who came to save us from our sins.
He founded only one Church before His Glorious Ascension into Heaven, the Catholic Church.
It is the Catholic Church, and only the Church, who canonized and decided, guided by the Holy Spirit, which books were inspired and inerrant and which were not at the Council of Rome in 382 A.D.
Whether they know it or not, whenever a Protestant opens a Bible to read the Word, they are implicitly saying:
I trust the decision Catholic bishops made at the Council of Rome in 382 A.D. as to which books make up the Word of God.
While they may have a Bible that omits 7+ books, they still believe Catholic bishops made the right decision on 66, or over 90 percent of the books in their Bible.
