Dear Pooka,
The Church considers many from the Old Testament to be saints but they don't necessarily have holidays. Adam and Eve are both saints. Under an older Church calendar their holiday was December 24th. The Patriarchs and the Prophets are all considered Saints, even if they haven't been officially canonized.
John the Baptist and St. Joseph, while New Testament figures, would be Old Testament or Old Covenant saints as they died prior to the events on Mt. Calvary and subsequent Resurrection.
That said, certainly:
- Moses
- Abraham
- Rachel
- Sarah
- Isaac
- Jacob, etc.
would be considered among the Saints.
