Hi Kate,

As an artist, you are free to depict them in any manner that is not sacrilegious or obscene.

You might want to find out the symbol traditionally associated with a given saint and if he or she is the patron/patroness of some given area.

Other than that, read John Paul II's beautiful Letter to Artists [Vatican][EWTN] and go with it!
