This is a canonical question, and we aren't competent to answer such questions authoritatively.
From the Catholic side, I don't expect this is a problem, heck, you can marry a non-Christian in Catholicism, but your fiancé may have some issues with his church if he wishes to remain in good standing with the Greek Orthodox church.
- Have you spoken to your pastor about this?
He's your go-to man for the nitty-gritty details.

I thought non-Catholics had to convert and receive Baptism, First Communion and Confirmation in a Catholic Church in order to get married there. My fiancé is not worried about remaining in good standing with the Greek Orthodox church.
I'll make sure to ask the pastor about this.

No, I can definitely say it is not true that a non-Catholic has to convert to Catholicism to marry a Catholic.
