James,

I am not aware of such an incident and my research has come up empty but given that a baby's brain is not developed enough to speak, it's hard to imagine that such an incident could even occur. I understand that there are incidents when adults possessed by demons powerfully resisted Baptism, but I am not aware of an infant resisting or protesting Baptism in this way.

The symptoms you describe are associated with demonic possession and generally, Catholic exorcists note that possession under age 5 is exceedingly uncommon, mainly because children have no personal sin for the demon to work through.
