There is not a clear universal understanding of
why historically we abstain from meat, but the Eastern
Christian tradition (with a
little 't') is that meat is considered to be a food that
clouds the senses and impairs one's ability to see
clearly spiritually.
Also, it is seen as a sign and
reminder of the life to come, when we will not eat
meat.
Again this is not a dogmatic belief but a well-established little-t tradition.
