Hi, Caren —

Unlike humans, dogs do not have immortal souls. When dogs die, they completely cease to exist. However, nothing is impossible with God, and we do not know everything (indeed very little) about what is to come, so we cannot completely preclude the possibility that God, in his love for us and desire for our happiness, arranges some way for us to be reunited with our beloved pets, whether by recreating them or some other means.

Caren —

My colleague is correct that dogs do not have souls that exist independently, but there is an out, here. Forms (souls) are specified to matter. They are the form of some individuated matter.
So perhaps God can "attach" the form of a dog to some unknown matter in the universe, enabling it to continue to exist in some way, until the restoration of all things.

When the renewal of heaven and earth comes about, there will definitely be animals and trees and everything. Another point is, there is no time with God, so perhaps there is a way in which the future is already present to him, and the animals exist in that future.

Personally, I saw my dog after she died, waltzing up the aisle toward the throne of God, and later many times she visited me, until I realized that dogs are often angels in disguise, as many saints have experienced.
